It was a good day

Sometimes I just have a good day. And today was one of those days. Jake told me on Monday that my friend Charity is coming out to visit me as a surprise and is going to be teaching a class for me and some friends about Young Living Essential Oils. I am super excited. It is like a pre-birthday party. I decided that I am going to have a tea party theme. So today I spent a lot of the day baking...which is one of my all time favorite things to do. Also, it was a beautiful day so I took the kids to the park after Elijah got out of school.

Noah brought the scooter. Poor kids. The scooter broke. They were sad. They don't even have bikes. I feel a bit of mom guilt there.

Recipes

BISCOTTI
Ingredients

2.5 cups unbleached flour
2 teaspoons baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
1/2 cup of softened butter
2 eggs
3/4 cups sugar
1/2 teaspoon of fennel essential oil

Directions
Sift dry ingredients together. Set aside. In a large bowl with a mixer beat butter, sugar, until fluffy, add eggs one at a time along with the fennel oil. Add flour mixture and beat on low until blended. Divide mixture into 2 parts. Each part becomes a log measuring around 2 1/2 inches by 9 or 10 inches long. Place logs on a parchment lined baking sheet. Bake in a preheated 350 degree oven 25 minutes or until golden brown on the bottom. Remove from the oven and let them cool down on a rack. Carefully cut them 1/2 inch thick, turn each piece on their side and bake on each side for 12 minutes or until lightly golden.
Makes around 25 biscotti depending on size.


Scottish Scones

1 1/2 cups flour
1/4  cup sugar
1 Tbs baking powder
1/2 Tsp salt
1/2 cup butter
1/2 cup milk
15 drops orange essential oil

  1. Combine flour, sugar, baking powder and salt in a large bowl. Cut in butter with a pastry cutter or two knives until mixture resembles coarse crumbs. Add milk, mixing until just moist. Add essential oil. On lightly floured surface, roll dough into a circle one-half inch thick. Cut into 10 wedges. Place on greased cookie sheet.Bake in a 425°F oven for 12-15 minutes.
  2. Note: Cranberries may taste good in this.
