Pepper Steak


I got this recipe 13 years ago from my NICU preceptor and have used it ever since. It's a hit. I made it just the other day when I got some peppers from our local market on wheels.
Pepper Steak
1 1/2 lb round steak
1/4 c oil
2 c water
1 tsp garlic
1 drop ginger essential oil or 1/4 tsp dried ginger
1 med onion
2 green pepper sliced
2 tsp cornstarch
4 tsp sugar
4 tbs soy sauce

Cut meat into 1/2 inch strips. Heat oil in skillet. Add meat. Cook until browned. Stir in water, onion, garlic and ginger. Heat to boiling. Reduce heat. Simmer until meat is tender. Add green pepper strips. Blend cornstarch in a bit of water and add along with sugar and soy sauce. Boil 1-2 min. Serve over rice.

Our Puppy, Molly

We had a little scare this week. Molly got really, really sick. She has been sick before, but this was different. I had a sinking feeling that is was Parvo and took her to the vet (a new one that I like MUCH better than the last one). Unfortunately, my suspicions were correct. She was admitted into their little overnight center and given antibiotics, anti nausea meds and an IV. She bounced back SOOOO quickly. They were very surprised. She is her normal self. I'm so very thankful!

The night that Molly came home, we had a special Kindergarten round up. The boys wanted to dress the part. Check out Noah's gelled back hair. He wanted to be a cool dude. Unfortunately, neither of their teachers was present because they are both new to the school. I guess we will meet them in August!!!

And Oliver just wanted to eat his shoes.
